Hello,

I've been making aruba 7210 controller upgrade

I have aruba cluster 7210 controllers version 8.11.1.2

Is it OK to go straight from 8.11.1.2 to 8.12.0.1 ?

And should i need to restart both of them at the same time ?

Yes, you can upgrade direct to 8.12.0.1.

If you are operating a cluster, then the expected method is to use live upgrade.  If you don't want to utilize live upgrade, then rebooting both controllers will force a quicker upgrade but incur an outage.
