I did end up using the mgmt vrf, but it would be nice to be able to manually bind to a chosen interface on the default vrf too, like AOS & comware.
It chose the WAN IP on the default vrf, I'd have like to be able to specify a loopback of my choice.

no you cant. But you can set vrf for it.

Is there a way to set the ssh source interface on CX switches? I can set "ip source interface all" but ssh still comes from an IP that gets ACL'd at the other end.
