On the 6300/6400 series there is support for Application Visibility. Please also check New Central help. For Client-Insight related configuration please check this page.
Keep in mind that Application Visibility and Client Tracker / Client Insight are access related features. This is not developed for datacenter purposes.
As I mentioned before, for VMware with have an integration available to collect VM related info and display this in New Central

Are there any other things that could be switched on to collect info about port clients or apps etc?

Client Tracker is a switch feature to keep a client 'alive' and collets input data for Client Insight.
Client Insight collects profiling and onboarding information that will be send to Central for client related info.

Client tracker is a feature for the campus access layer.
For datacenter, we are working on a VMware integration from New Central to pull information. Please check the New Central documentation portal. https://arubanetworking.hpe.com/techdocs/new-central/content/extns/vsphere/vsph-intro.htm
Please reach out to your HPE Aruba account team for more information.
