Both the IAP 207 and 325 model are end of support, so won't receive new updates, which also may put you at a risk that old vulnerabilities are exploited.
Flashing Instant firmware to campus AP (AP model, not IAP model) is not supported. Except for lab testing, you should not do that.
In order to form an Instant cluster, all APs should be running the same firmware version, and be of the same regulatory domain, like -US or -RW.
As Onno mentioned, some older 325 models can't run recent code due to low memory; so you may consider returning the APs and try to get newer, and Instant/IAP models instead.

I'm running a cluster of 40 IAP 305 and IAP 207 at a school. Now I got 8 "new" AP 325 and I have to integrate them to the existing cluster. There's no physical controller, just the IAP devices. Is this possible? I startet up the 325 but i does not join the cluster.
I have no idea which firmware is installed. How to figure that out? And if possible: Can I flash IAP firmware to the device?

Look at the back of the AP and check the model number it will be AP or IAP.
If you have AP-xx then you will need a physical controller.
If you have IAP-xx then you can configure the Virtual Controller using the instructions provided earlier.
