Device onboarding is done via Classic Central today.
Once the device is online in Classic you simply add it to a site for MRT (Monitoring reporting & Troubleshooting) or assign it a Device Function + move it to a Central 3.0 group (in classic) for configuration.

I'm assuming this is an AOS-10 AP? If your AP is online, licensed in GLP, and connected to Central you should see it in Classic under groups > all connected devices
From the AP you may want to issue show activate status to ensure its actually connected to Central.
If its truly not showing up in Classic you may want to open a TAC case.

The only place they show up in is the new central device inventory (where device function has been asigned) and the old central device preprovisioning.
but the preprovision options are obviously limited to groups (which there are none, so it only shows me "default") since old central didnt have site configuration.

I owe you a correction. The site picker isn't in the Device Assignment panel, and it isn't anywhere in New Central. The New Central Sites help topic says it plainly: assigning a device to a site, or removing one, can only be done in Classic Central. New Central owns device function, Classic still owns site membership, and the two sync back to each other.
In Classic, set the filter to Global, go to Maintain then Organization, stay on the Network Structure tab and open the Sites tile. On the Manage Sites page click Unassigned. That's the bucket your APs are sitting in, and it's why they look absent from every site. Select them there, twenty or fewer at a time, and drag them onto the site on the left. Confirm, and New Central picks the site up.

Yes, thats how its written in the Documentation too, but it seems to be wrong.
i just did what you said, unassigned all APs from Central and un-/relicensed them, assigned them back, and the only menu i still see is the device function, nothing about the Sites.
Interestingly, the APs dont show up in old Central AT ALL under the sites tab, but do in the group and preprovisioning tab.
So, if not new central neither old central allow me to assign a site to the APs, what am i supposed to do now?

The Sites dropdown isn't on its own screen, it lives inside the Device Assignment side panel under Device Function. Pick the function first, campus AP or whatever applies, and the site selector shows up in the same panel. If you assigned function without setting a site, the panel closes and there's no obvious way back in.
Reassignment after the fact is only documented for bridge device types, so for an AP the reliable move is to unassign the device and run one clean pass with both function and site set together. Worth checking the AP is fully onboarded and licensed first, since a device that hasn't finished claiming will show the panel with pieces missing and you'll chase a UI problem that's really a provisioning one.

Up until now, I've just went into Classic Central and assigned them to the site that way.
