I realise that Wireless bridging to Wireless bridging is possible with Aruba APs, however, what are the limitations to this. For example, Can one AP bridge to more than one other AP in this configuration? If so, what is the max number of wirelessly Bridged APs that can be simultaneously connected/bridged to a single centralized AP? Consider a Campus with a main computer room surrounded by multiple Dorm room buildings (12+) that each have local LAN networks with students that need to access the centralized Servers and managed Internet resources. Would this require multiple Centralized APs to support the connectivity requirements?

If you are talking about a mesh setup, yes, you'll want multiple mesh APs.  You'd probably end up with a design calling for dedicated point-to-point pairs of APs in order to best handle the connectivity.

We are kind of looking for a point to multi point-solution. I am not sure it this possible and if it is, what the limitations and considerations are for doing this.

Mesh is just Wi-Fi, so your primary limitation is the amount of bandwidth you can get through any single channel.  Each mesh portal is going to operate on a single channel, all mesh points associated with that portal will also be on that channel.

Channel size, interference, duty cycle, upstream bandwidth limitations, all of that comes into play when looking at mesh.

Aside from effective thoughput and potential interference is there any quantity restrictions (number or Mesh nodes connected to a central base AP) that we need to consider with an Aruba based solution?

The default and maximum limits are dependent on what version of software you are running, but you generally want to avoid connecting more than eight mesh points to the same portal, or going more than two hops (i.e., portal-point-point) away from the portal.

That is the information that we were looking for to give us an idea from a potential topology perspective.
