I would like to authenticate my guest operators with SAML, but then user the mapping feature to assign roles, using LDAP info.

Is this possible? From what I can see, I can only set the role using the CPPM enforcement profile.

Yes, you can use any user authorization source during policy evaluation for an Application Authorization, assuming the subject exists in the identity store.
