If you have your APs in an management platform like Aruba Central or Airwave, you can probably collect the interface statistics and traffic trending from there.
I would say that in practice it may be unlikely that you really experience performance limitations when an AP is connected to a 1Gbps switch port. With tri-band radios, like in the AP6xx series, and the higher bandwidths on 6GHz, it's more likely that you may hit 1 Gbps in one direction (note that WLAN is half-duplex, ethernet is full duplex so could be considered '2 Gbps') but then still it depends on your applications if there is really a noticeable bottleneck on the wired switch port. And if you really have such high-bandwidth clients/applications, having a 10G uplink may be another bottleneck.
But without knowing more about your environment, clients, AP density, applications, it's hard to tell if you need 2.5/5G ports. For the sake of future-proofing, it makes sense to at least consider SmartRate.
