Hi!

How long the visitors list is being saved in Central Visitors page?

I don't believe there is a cleanup interval for old accounts. You need to perform this cleanup. See below how to filter out inactive accounts, and delete them:

In my situation, I want that accounts to be saved as much as possible.

So, if  I create accounts for visitors, these accounts will be never removed from Central? If so, it is that what I need.

Yes I believe so. They can expire, but they stay in the user database.
