Adding to Herman's list, the reason you couldn't find a 10G 6300 is that the original JL SKUs genuinely didn't have one. Smart Rate on those stopped at 5G. The 10G access ports only showed up later with R8S89A and the S0E91A, so nothing was discontinued, it just arrived after whatever collateral you were reading. If you remember 10G copper disappearing, that's more likely the 3810M or the JL081A module, both end of sale now.
On your 8100 question, you're right to be suspicious of it for access. It's real 10GBASE-T at 24 or 40 ports, but it has no PoE at all, so it only fits closets serving self-powered gear. Anything with an AP or a camera on it puts you back on the 6300M.
Between the two 6300M options the deciding factor is usually power, not ports. R8S89A is Class 6, so 60W a port, fine for Wi-Fi 6E and 7 APs. If you're feeding 90W PTZ cameras or multi-radio gear you want the Class 8 S0E91A.

Also there are 10G modules for the 6400 chassis.
